Additionally, are you looking to just proxy the traffic (potentially caching content at your network edge) or are you looking for content filtering, too (e.g. prevent users visiting certain sites)?
If you're just looking for a web proxy then you can just build and install squid (it works well), or use the built-in Apache 2 server (although I would recommend upgrading to apache 2.2 rather than the 2.0.x bundled version).
If you've used squid in the past then that might be the easier way to go. Squid can also act as a proxy for other protocols, so it might fit your needs better.
Both Squid and Apache require configuring via the terminal. If you're not familiar with building applications on the command line then you might consider a commercial package such as InterGate which packs a proxy server into a package along with various other 'net goodies (rate filtering, connection teaming, NAT, content filters, etc.).
Should I reposition the Server between the users router and internet connection
That depends. If you want to force users to go through the proxy you might have to otherwise you're relying on users' systems being configured to use the proxy, which experienced users might be able to circumvent.
I cannot locate the internet sharing tab. I have checked the proxy box but know it isn't that easy.
In Mac OS X Server, all sharing functions are controlled via either Workgroup Manager (sharepoints, access control, etc.) or Server Admin (process configuration/stop/start/monitoring), but there's no 1-button proxy server setting.

To configure a proxy server on your Mac computer, follow the steps below. Step 1: Getting Started In this example we will use an open source solution called SquidMan, although this may sound like a daft name, Squid is one of the most respected proxy servers available and SquidMan is. For proxies that require authentication, or if you still have errors after entering the proxy server settings, add the following domains and the server address to the Bypass proxy settings for these Hosts & Domains field (as explained in the Apple article). Mac OS X Proxy configuration If your computer is connected to a local network that’s protected from the Internet by a firewall, you may need to specify proxy servers or use the FTP passive mode (PASV) to access some Internet sites. Setting Up a Proxy Server on a Mac. If your business uses Mac OS X and wants to use a proxy server to control or secure Internet traffic through your network, there are some considerations to be mindful of. Apple’s operating system allows you to control what types of Internet traffic must pass through a proxy.
Welcome to Microsoft Defender for Endpoint, the new name for Microsoft Defender Advanced Threat Protection. Read more about this and other updates here. We'll be updating names in products and in the docs in the near future.
This topic describes how to install, configure, update, and use Microsoft Defender ATP for Mac.
Running other third-party endpoint protection products alongside Microsoft Defender ATP for Mac is likely to lead to performance problems and unpredictable side effects. If non-Microsoft endpoint protection is an absolute requirement in your environment, you can still safely take advantage of MDATP for Mac EDR functionality after configuring MDATP for Mac antivirus functionality to run in Passive mode.

|The spreadsheet provides specific DNS records for service locations, geographic locations, and OS.|
Microsoft Defender ATP can discover a proxy server by using the following discovery methods:
- Proxy autoconfig (PAC)

- Manual static proxy configuration
If a proxy or firewall is blocking anonymous traffic, make sure that anonymous traffic is permitted in the previously listed URLs.

Authenticated proxies are not supported. Ensure that only PAC, WPAD, or a static proxy is being used.
SSL inspection and intercepting proxies are also not supported for security reasons. Configure an exception for SSL inspection and your proxy server to directly pass through data from Microsoft Defender ATP for Mac to the relevant URLs without interception. Adding your interception certificate to the global store will not allow for interception.
To test that a connection is not blocked, open https://x.cp.wd.microsoft.com/api/report and https://cdn.x.cp.wd.microsoft.com/ping in a browser.
If you prefer the command line, you can also check the connection by running the following command in Terminal:
The output from this command should be similar to the following:
We recommend that you keep System Integrity Protection (SIP) enabled on client devices. SIP is a built-in macOS security feature that prevents low-level tampering with the OS, and is enabled by default.
